at their optimum point of maturity the same day and macerate
in cold for 5-7 days, both varietals together in the same
Stainless steel tank.
Alcoholic fermentation: with indigenous yeasts, carried out in 75 hl
tanks, at a temperature of 25-27°C.
Fermentation and maceration time (days): 20 a 25 days.
Malolactic fermentation: In oak barrels.
Aging: 12 month in French oak.
